Here is a great treat that will keep you coming back for more. My luscious Red Apple Spice Cake has become a year-end holiday family tradition, simply because this was the only time of the year that I would bake this cake. It became such a tradition that friends and extended family members began to request this favorite as part of their holiday treat. The rich, comforting taste of apples, combined with familiar spices and nuts gives this savory, mouthwatering treat a zesty edge that will keep you wanting more. Prepared as a cake or as bite-sized muffins, you are sure to enjoy this fantastic dessert!
Yield: 15 Servings
Prep Time: 15 – 20 Minutes
Bake Time: 1 Hour
3 cups “King Arthur Flour” Whole Wheat Flour (or unbleached all-purpose flour)
1 teaspoon baking soda
1 teaspoon salt
½ teaspoon nutmeg
½ teaspoon cinnamon
2 cups brown sugar
1 cup vegetable oil
3 eggs (or substitute egg replacement)
2 teaspoon 100% pure vanilla extract
3 medium red apples, peeled and chopped
1 cup chopped walnuts
¼ cup butter
½ cup brown sugar
1/3 cup almond or soy milk
