I was first introduced to this salad at a potluck where it was touted for its high Vitamin C content. Created by my friend Karl, this Vitamin C Boosting Salad made it on my list of favorites, particularly during flu season when everyone can easily benefit from an extra punch of Vitamin C. As you may well know, Vitamin C is immune system boosting, essential for treating and reducing the duration of the common cold, reduces cancer risk, keeps the skin and nails looking their best and helps maintain healthy blood pressure levels. With all these health benefits no one should go a day without this awesome nutrient. The mung bean sprout and red cabbage in this recipe are loaded with vitamin C. A few heaping spoons of this healthy yet tasty salad is all you need to help keep the flu at bay. Enjoy!

Ingredients
½ small to medium red cabbage – shredded
½ small to medium green cabbage – shredded
3 medium carrots – shredded
½ small to medium cauliflower- shredded
½ pound broccoli – shredded
1 romaine lettuce – finely chopped
½ cup mung bean sprout
½ cup dried cranberries
2 tablespoon 100% pure extra virgin olive oil
½ tablespoon fresh lemon juice (optional)
Cashew (optional for extra protein)
Note: You can substitute your own salad dressing blend but be sure to pour on at room temperature or cold to avoid losing the potency of the Vitamin C.
Preparation Directions
Wash all vegetables thoroughly.
Shred and chop vegetables as appropriate for the ingredients above and set aside.
In a large bowl, mix the mung bean sprout and cranberries.
Add shredded and chopped vegetables until all ingredients are mixed. proportionately.
Add olive oil and other optional ingredients. If you are using Lemon Essential Oil, add this to olive oil in step by dipping a toothpick in the essential oil and allow 2 drops to drip into the olive oil before mixing into the salad.
Mix evenly, serve and enjoy!
