This cucumber, tomato and arugula salad recipe is keto friendly and filled with vitamins and other nutrients. Cucumber, for example, contains provitamin A, and some Vitamins B, C and E. Arugula has Vitamin K. Tomato contains antioxidant with a significant amount of vitamin E and some vitamin C, iron, potassium, and beta-carotene. Individuals who eat a significant amount of antioxidants rich foods are know to have lower of levels of cancer, cataracts, heart disease and stroke.
When possible, prepare with fresh organic ingredients to avoid pesticides and stay healthy.
